Pasta Casserole

I got this recipe from my mom about 2 years ago, although I am sure that there are similar recipes and variations floating around the web. Basically, it is just a pasta cooked al dente (not quite fully), then mixed with tomato sauce, cheese, and sausage, and then baked in a casserole dish. Here’s what you’ll need to make it:

  • 2 links (uncooked) hot italian sausage
  • 1 lb pasta of your choice (rotini works very well)
  • 1/2-1 lb shredded mozzarella cheese (depending on how much you like cheese)
  • 1 jar of pasta sauce

The first thing you need to do is to start a pot of water to boil and preheat the oven to 350 degrees. Grease a 13 x 9 inch baking pan (I used a glass pan, which worked well) and set aside. While the water is boiling, heat a medium sized frying pan to medium high heat and add the sausages after they have been removed from their casings. Crush the sausage into small pieces and cook until it starts to get crispy.


Set aside in paper towel lined bowl to absorb some of the grease. Add your pasta to the boiling water, and cook for 2 minutes less than what is recommended on the package, which should be about 9 minutes. Once the pasta is done, strain and rinse with cold water and add it to your casserole dish. Next, add your pasta sauce and mix it in. Add your sausage and cheese and mix those as well. Once it is fully mixed, bake at 350 degrees for 20 minutes and let cool for 5 before serving.
